Frog Eye Salad – Creamy Fruit & Acini De Pepi Salad

Homemade citrus pudding with pineapples, mandarin oranges mixed with dairy free whipped topping and pearl pasta for frog eye salad dessert. This recipe is best when made overnight, it’s not hard to make but it does take some fussing over to cook the pineapple juice pudding.

  • sugar
  • flour
  • salt
  • eggs
  • lemon juice
  • vegetable cooking oil
  • 1 package (16 oz.) Acini de Pepe
  • 3 cans(11 oz. each) mandarin oranges
  • 2 cans (20 oz. each) pineapple chunks
  • 1 can (20 oz.) crushed pineapple
  • 1 (9 oz.) non-dairy whipped topping
  • miniature marshmallows (optional)
  • shredded sweetened coconut (optional)

This recipe is best when made overnight. Directions are split into 2 days, day 1 and day 2. If you want to make this recipe in one day follow the same directions. Refrigerate pudding & pearl pasta mixture for 3 to 6 hours instead of overnight.

Ingredients

  • 1 cup sugar

  • 2 tablespoons flour

  • 2 1/2 teaspoon salt

  • 1 3/4 cup pineapple juice

  • 2 eggs, beaten

  • 1 tablespoon lemon juice

  • 3 quarts of water

  • 1 tablespoon cooking oil

  • 1 package (16 oz.) Acini de Pepe

  • 3 cans(11 oz. each) mandarin oranges, drained

  • 2 cans (20 oz. each) pineapple chunks, save drained juice

  • 1 can (20 oz.) crushed pineapple, saved drained juice

  • 1 carton (9 oz.) non-dairy whipped topping

  • 1 cup miniature marshmallows (optional)

  • 1 cup coconut (optional)

Directions

  • DAY 1- How to cook the egg pudding mixture
  • In a medium saucepan combine sugar flour and 1/2 teaspoon salt.
  • Stir in pineapple juice and beaten eggs.
  • Continue stirring  on medium heat until thick.
  • Add lemon juice & cool mixture to room temperature
  • How to cook Acini de pepe pasta
  • Bring water and remaining 2 teaspoons salt and oil to boil.
  • Add Acini de pepe to boiling water
  • Cook until done
  • Drain and rinse  Acini de pepe
  • Cool to room temperature
  • Thoroughly mix egg mixture with Acini de pepe
  • Refrigerate overnight in airtight container
  • DAY 2-  Frog eye salad remaining ingredients
  • Add all remaining: Mandarin oranges, Pineapple chunks, Crushed pineapple, non-dairy whipped topping, miniature marshmallows, and coconut
  • Mix everything together
  • Refrigerate until chilled, in an airtight container.

Notes

  • How long will fruit salad last in the refrigerator? Frog Eye fruit salad maybe refrigerated for as long as 1 week in an airtight container.
  • Can frog eye fruit salad be frozen? Yes, but freezing alters the texture of this salad.
