Flour all-purpose high-gluten flour works best.
Shortening can be substituted with vegetable oil or butter.
Yeast recipe calls for 1 fresh yeast cake substitute with 1 tablespoon instant yeast.
Milk whole or skim milk
White Sugar or substitute with honey
Table Salt or sea salt (kosher salt can be used, simply increase salt to 2 teaspoons)

- Plastic scraper (optional tool for cutting bread dough and cleanup)

Steps To Make Simple Homemade Dough
Step 1 – In a small bowl dissolve fresh yeast with ½ cup water and 1 tsp sugar. *Skip this step if you’re using instant dry yeast.
Step 2 – Place milk in a small saucepan over medium-low heat with shortening or butter and salt. Heat milk mixture to scalding or almost simmering. Cool milk mixture to a warm temperature.
Step 3 – Add flour, yeast, and milk to a large bowl or stand mixer. Mix together by hand and knead for 20 minutes. For a stand mixer with a dough hook mix on low-medium speed for 10 minutes.
Step 4 – Cover dough with a clean kitchen cloth or plastic wrap. Let rise until doubled in size about 3 ½ hours.
Step 5 – Punch dough down and cut into 12 equal pieces of dough. Add a little bit of flour to the work surface and shape yeast rolls. Shape dough into clovers, crescent rolls, or cute bunnies.
How to Shape Yeast Rolls For Easter
Clover Easter Rolls: Separate and shape a piece of dough that is a little bigger than a golf ball size. Place dough ball in a prepared baking dish 1″ apart. Using kitchen scissors clip the top of each roll twice forming an X on the top of each roll. Let rise before baking to a golden brown.

Crescent Rolls: Shape dough into a smooth ball. Roll out flat to 1/2″ thick into a large circle. With a pizza cutter or sharp knife cut into quarters and quarter again to make 8 triangles.
Roll each triangle into a crescent shape from the longest end to the tip of the triangle, close with a dab of water. Rise until doubled in size and bake on a prepared cookie sheet until golden brown.
Cute Easter Bunny Rolls: Cut dough into 20 small pieces. Hand stretch each piece until it’s a smooth round ball. Flatten the ball to ½” thick. Cut top of the circle with a \ / shape to the center of the circle.
Be careful to leave a finger width between each cut in the center of the circle. Fold the center section in half touching the centerline, fold again on the centerline.
Hold the two ends, fold under, and pinch together. Fold tip up to form a nose. Place on a cookie sheet with parchment paper and let rise until doubled, bake to a golden brown bunny.

Mini Silver Dollar Sandwich Rolls: Cut dough into two round dough balls and hand stretch to a smooth ball. Roll dough to ¾” thick and cut with a 1.5” or 2” round cookie cutter or use the rim of a small cup.
Place rolls on a prepared cookie sheet and bake until golden brown for about 12 minutes at 350 F.

1/2 cup milk
2 tbsp shortening or vegetable oil
2 tbsp sugar
1 1/2 tsp salt
1 egg beaten
1 yeast cake or 1 tablespoon active dry yeast
1/2 cup water
1 tsp sugar
5 cups flour
Directions
- Dissolve yeast cake with 1/2 cup water and 1 tsp sugar. (Skip this step if using active dry yeast)
- Place milk in a small saucepan over medium-low heat with shortening and salt. Heat milk mixture to scalding or almost simmering. Cool to a lukewarm milk temperature.
- Add flour, yeast, and milk to a large bowl. Mix with a wooden spoon for 5 minutes. Knead by hand for 20 minutes on a lightly floured surface.
- Cover the dough with a clean kitchen towel or flip a large mixing bowl over the top. Let dough rise until doubled. This could take several hours depending on the humidity and temperature of your kitchen.
- Preheat the oven at 350°F. Bake for 12 – 15 minutes or until golden brown
