3 Easy Steps – Homemade Chocolate Chips

Make the best chocolate chip ice cream recipe with simple ingredients. Use your favorite candy bar or chocolate to make your own chocolate chip flavors.

STEP 1 – Chop Chocolate & Melt

Placed chopped chocolate in a bowl. Melt chocolate in microwave or a bain-marie on the stove to melt chocolate.

STEP 2 – Spreading Chocolate

Spread warm melted chocolate In the middle of a large sheet of baking paper, use an angled spatula or plastic scraper. Spread chocolate evenly while leaving a clean 2″ border around the edge of the paper. Cool chocolate completely until set.

STEP 3 – Break Into Thin Homemade Chocolate Chips

Roll up the cooled chocolate sheet from one end to the other. Press and break into thin chocolate chips for your ice cream. Place chocolate chips in a cool dry container until you are ready to use them.

How To Melt Chocolate In A Microwave

Place chocolate in microwavable safe glass bowl. Melt chocolate chips 30 seconds at a time and stir with a wooden spoon.

Repeat melting chocolate chunks for 30 seconds and stir until you see very small pieces of melted chocolate.

When the chocolate is warm do not heat again, keep stirring until chocolate is completely melted. Follow chocolate chip steps 2 & 3. Temper chocolate for a non marbled chocolate.

How To Melt Chocolate In A Bain-marie On The Stove

Fill a medium sauce pan half way with water. Choose a medium heatproof glass or metal bowl that fits into your sauce pan.

Test bowl size by pressing the bowl down into the pan, make sure the water level reaches the middle of the bowl but does not spill over. Remove bowl and bring water to a boil.

Reduce heat to a simmer. Add chocolate chips or chunks to the bowl and place it over a water bath. Stir until chocolate is almost melted.

Remove from heat and continue stirring until all bits of chocolate are completely melted. Your ready for step 2. or learn how to Temper chocolate for a shiny non-marbled chocolate chip or use coating chocolate that does not have to be tempered.

How To Make Chocolate Ice Cream – Double Chocolate Chocolate Chip Ice Cream

Modify vanilla ice cream recipe by adding 3 cups of chocolate chips and reduce vanilla extract to 1 teaspoon.

Directions:

  1. Add chocolate chips to a large bowl.
  2. Warm heavy cream over medium low heat until simmering.
  3. Poor hot cream over chocolate chips and whisk together until all chocolate is melted. Cool completely in the refrigerator over night. Use chocolate mixture instead of 1 pint heavy cream.

For a rich dark chocolate ice cream base use a darker chocolate chip and 1 tablespoon of instant coffee with the cream mixture.

  • CHOCOLATE CHIP INGREDIENTS
  • 16 oz chocolate or mini chocolate chips (see notes for variations)

  • baking paper

  • VANILLA ICE CREAM INGREDIENTS
  • 1 pint heavy cream

  • 4 teaspoons vanilla extract

  • 1 quart whole milk

  • 1 (14oz can) evaporated milk

  • 1 cup sweet condensed milk

  • 1 ½ cup sugar

Directions

  • How To Make Thin Chocolate Chips In 3 Steps (skip if using mini chocolate chips)
  • Melt chocolate chips or chunks (See Notes for Microwave or Bain-marie directions)
  • In the middle of a large sheet of baking paper, with an angled spatula or plastic scraper spread chocolate evenly (leave a clean 2″ border around paper). Cool chocolate, if your home is warm you may need to place in your fridge or freezer until set.
  • How to Make Vanilla Ice Cream
  • Mix all ingredients together
  • Poor ice cream mixture into your ice cream maker according to your manufacturer’s directions.
  • Churn ice cream according to your ice-cream maker manufacturer’s instructions
  • Ice cream is done churning when it’s a creamy texture like soft serve ice cream.
  • Add your homemade thin chocolate chips on top, churn ice cream until chips are mixed in.
  • Transfer mixture to an air tight freezer container or cover with plastic wrap. Ice cream should harden up in about an hour.

Notes

  • Homemade chocolate chip variations: Use your favorite flavor of mini chocolate chips or make your own chocolate chips with milk chocolate, dark chocolate, semisweet chocolate, white chocolate, mint chocolate or your favorite chocolate bar.
  • How to melt chocolate in microwave: Place chocolate chunks in microwavable glass bowl. Melt for 30 seconds and stir. Melt for another 30 seconds and stir keep melting 30 seconds at a time until you see pea size pieces of chocolate. Stir until chocolate is completely melted.
  • How to make mint chip ice cream: Add a small amount peppermint extract to ice cream base. Omit vanilla extract.
  • How to make double chocolate chocolate chip ice cream: Add 3 cups of chocolate chips to heavy cream. Use only 1 teaspoon of vanilla extract.
